look at the To line of your sample:

         "xxx.xxx_at_example.it" <xxx.xxx_at_example.it>
----
there is a linebreak. The linebreak is unusual but valid per RFC5322  
and trigger a OpenDKIM-Bug if I remember correctly.
I'l have to search in my email archive about details ...
