The From: could be added by sendmail if it was absent on the submitted message. Mail filters (milters) see the message as it arrived via SMTP, and then sendmail makes some changes like adding missing required header fields and doing proper comment quoting, etc.

Can you capture a message as it goes in to sendmail?
