This error means your public key is not visible in the DNS.

It would help to see real values in your KeyTable so we could test it
ourselves, but based on what you have the public key should be a TXT
record at default._domainkey.example.com.

You might try using opendkim-testkey to confirm that the key is visible in
your DNS and is the correct key.

What value of Domains and Selector do you have when it works?
