Your sendmail.mc configurations seems to be correct.
What does a "telnet 127.0.0.1 8891" say?
Did you set the socket in opendkim.conf? On Debian is has to be set
in /etc/default/opendkim
SOCKET="inet:8891_at_127.0.0.1"
