If you installed multiple postfix instances you thought about
simpfied configurations versus system complexity.
In this case you should also install multiple dkim processes.

If speed matters, I also would install a separate instance optimized for
it work.

But I also have setups using one process as signer and verifier.
As always: it's a question of balance. Try both!
