You're right that you can't change it at the verifier. But if the signer is using relaxed/relaxed or relaxed/simple, and both ends are operating properly, then a change from "Mime-Version" to "MIME-Version" won't break the signature. "relaxed" on the header fields puts the names to lowercase before processing at both ends, so it'll match if that's the only change.
